DIY Hailey Bieber Erewhon Strawberry Glaze Smoothie — The $21 Drink for Under $5

Let me paint you a picture.

Two Erewhon Strawberry Glaze Smoothie with glass straws, garnished with fresh strawberries, sit on woven coasters. Creamy coconut and strawberries nearby.

You're in Los Angeles. You've just finished a pilates class. You're glowing, your linen set is impeccable, and you casually walk into Erewhon Market — LA's most legendary (and most expensive) grocery store — and order a Strawberry Glaze Skin Smoothie for $21 without blinking.

Cool. Very cool. Very not most of our realities.

Here's the thing though — I've been making this exact smoothie at home for under $5, and honestly? I think mine might be better. After a lot of trial and error (and way too many pink-stained kitchen towels), I've cracked the code on the full recipe: the gorgeous strawberry glaze, the coconut cream swirl, the thick skin-loving base packed with collagen and sea moss. The whole thing.

So grab your blender, babe. We're doing LA wellness from our own kitchen today.

What Even IS the Erewhon Strawberry Glaze Smoothie?

If you've spent any time on wellness TikTok or Instagram in the last few years, you've definitely seen it: a tall glass with a glossy pink strawberry glaze swirled up the sides, a swoosh of white coconut cream, and a thick pink smoothie that looks like it belongs on a spa menu somewhere in Malibu.

It started as a collaboration between Erewhon Market — an organic grocery chain in LA that has become the spiritual home of celebrity wellness — and Hailey Bieber, who launched it alongside her skincare brand Rhode in 2022. It went absolutely viral, and at one point Erewhon was reportedly selling more than 40,000 of these smoothies every single month. From one drink. At one store. Wild.

The drink is still on the menu today (the name has changed slightly, but the recipe is essentially the same), and it still costs around $21 a pop. Which is why we're here.

Why Does This Smoothie Have Such a Cult Following?

Because it's not just pretty — it's actually packed with ingredients that do real things for your skin. This isn't a mango-banana smoothie dressed up in aesthetic packaging. The Erewhon version is genuinely formulated around skin health, and that's why it resonates so hard with women who care about aging well and glowing from the inside out.

Here's what's inside and why it matters:

🍓 Strawberries — loaded with vitamin C, which is essential for your body's own collagen production. Antioxidants in strawberries also fight the oxidative stress that contributes to fine lines and dull skin.

🥑 Avocado — healthy fats that support your skin barrier and help your body absorb fat-soluble vitamins. Also makes the smoothie impossibly creamy.

🧴 Collagen peptides — this is the big one. As we get older, our bodies naturally produce less collagen, which leads to thinner skin, more wrinkles, and loss of that plump elasticity we had in our twenties and thirties. Multiple clinical studies — including a 2019 systematic review published in the Journal of Drugs in Dermatology that analyzed 19 separate trials — found that collagen peptide supplementation was consistently associated with improvements in skin hydration, elasticity, and the appearance of wrinkles. Unlike whole collagen (like in bone broth), hydrolyzed collagen peptides are broken into smaller chains that your body can actually absorb efficiently.

💧 Hyaluronic acid — yes, you can drink it. Food-grade liquid hyaluronic acid is tasteless and blends perfectly. HA is a molecule that occurs naturally in your body and holds moisture in your skin tissue. A 2021 double-blind, placebo-controlled study found that oral hyaluronic acid supplementation improved skin wrinkles and moisture content after 12 weeks of use.

🌊 Sea moss gel — a mineral-dense algae that's had a serious wellness glow-up in recent years. It's rich in iodine, potassium, calcium, and magnesium, and is used in wellness circles for gut health, immunity support, and skin nourishment.

🥥 Coconut cream — the fat content slows digestion of the natural sugars in the fruit, keeping the smoothie from spiking your blood sugar. Also: it's what creates that iconic swirl.

Quick honest note: while the research on collagen peptides and oral hyaluronic acid is genuinely promising, most studies are relatively small and short-term. Harvard Health notes that large, long-term studies are still needed to fully confirm the skin benefits of oral collagen. This smoothie is delicious and nutritious — just don't expect overnight miracles. Real glow takes consistency, not one drink.

What You'll Need

The beauty of this recipe is that most of the core ingredients are things you either already have or can grab easily. The "fancy" supplements — collagen and sea moss — are both available on Amazon and last for months, so the per-serving cost drops fast.

For the Strawberry Glaze:

  • 1 cup fresh strawberries, roughly chopped

  • 1 tablespoon maple syrup

  • 1 teaspoon lemon juice or fresh squeezed

  • Splash of water

For the Smoothie Base:

For Assembly:

Total cost per smoothie at home: approximately $4–$5.

How to Make It — Step by Step

Total time: about 15 minutes (mostly hands-off while the glaze cools)

Step 1: Make the Strawberry Glaze

Bowl of chopped strawberries, lemon half, and three small bowls with liquid ingredients on a pink tiled surface, creating a fresh kitchen scene.

Add your fresh strawberries, maple syrup, lemon juice, and a small splash of water to a small saucepan over medium heat. Stir occasionally and cook for about 10–12 minutes until the strawberries have completely softened and broken down into a glossy, jammy sauce. Remove from heat and blend briefly with an immersion blender (or transfer carefully to a regular blender) until smooth. Pour through a fine mesh strainer to remove any seeds, then transfer to a small jar or bowl and let cool completely. You can make this the night before and refrigerate it — I actually prefer it that way.

Pro tip: Make a double batch of the glaze. It keeps in the fridge for a week and is incredible drizzled over Greek yogurt, pancakes, or oatmeal. You're welcome.

Step 2: Prep Your Coconut Cream

Bowls of sliced bananas, frozen strawberries, dates, avocado, and protein powder over a pink tile background.

Take your chilled coconut cream out of the fridge (chill it the night before for best results — the cold helps it firm up into something you can actually swipe and swirl). Use a small spoon or spatula to scoop out the thick cream from the top of the can. Whip it briefly with a fork until it's just a little fluffy. Set aside.

Step 3: Blend the Smoothie

Add your almond milk to the blender first, then pile in the frozen strawberries, frozen banana, avocado, collagen peptides, sea moss gel, hyaluronic acid drops, and the Medjool date. Blend on high for 45–60 seconds. The goal is thick — almost soft-serve consistency. If it's too thin, add a few more frozen strawberries or a couple of ice cubes and blend again. You want it to hold its shape when poured, not slosh around.

Step 4: Assemble (This Is the Fun Part)

Take your tall glass and use the back of a spoon to swipe the whipped coconut cream in a swirl around the inside of the glass. It should coat the sides in white streaks. Pop the glass in the freezer for 2–3 minutes to let the cream set — this is what gives you that clean marble effect.

Take the glass out of the freezer, pour 2–3 tablespoons of your cooled strawberry glaze into the bottom. Then slowly pour your thick smoothie over the back of a spoon so it layers on top of the glaze without immediately mixing. Top with a tiny bit more coconut cream and a fresh strawberry slice on the rim if you want the full Instagram moment.

Step 5: Sip and feel unreasonably fancy.

Lazy Girl Shortcuts (No Judgment)

Not feeling the glaze situation today? I get it.

  • Shortcut glaze: Use a high-quality strawberry jam or preserves (100% fruit, no added sugar). Swirl 2 tablespoons into the bottom of your glass. Not identical to the homemade version but honestly? Delicious and done in 5 minutes.

  • Skip the sea moss: The smoothie is still nutrient-rich without it. Sea moss can be pricey and some people don't love the texture. Sub a teaspoon of spirulina powder for a mineral boost instead.

  • No collagen? No problem: Swap in a scoop of your favorite vanilla protein powder. You lose the specific collagen benefits but you still get a great-tasting, protein-packed smoothie.

  • Make it vegan: Use plant-based collagen powder or protein powder instead of standard collagen peptides (which are animal-derived).

The Bottom Line

The Erewhon Strawberry Glaze Skin Smoothie is iconic for a reason — it tastes incredible, it looks stunning, and the ingredient list is genuinely built around skin health. But at $21 a glass, it's not exactly a daily habit for most of us.

This version costs under $5, takes about 15 minutes, and gives you the full experience: the pink glaze, the coconut cloud swirl, and a base packed with collagen, hyaluronic acid, and sea moss. Make it once and you'll understand why people in LA spend $21 on it. Make it twice and you'll never pay $21 for it again.

Your glow-up doesn't require a trip to California. Just a blender and a little patience with the glaze. 🍓
